One pork tenderloin roast approximately 1.5 to 2.5 pounds
Zesty Pelican Original Blend seasoning
1/4 cup extra virgin olive oil
marinade for pork (optional)
1 cup orange juice
1 cup lemonade
1 can light beer (12 oz)
1/4 cup olive oil
1 cup extra virgin olive oil
3/4 cup red wine vinegar
1/2 cup chopped parsley
1/4 cup chopped cilantro
2 cloves garlic (minced)
1 chopped roasted Fresno chile
1 tbsp minced red onion/shallot
1/4 cup finely chopped cherry tomato
1 tbsp Zesty Pelican Original Blend seasoning
If marinating pork tenderloin, prepare marinade as directed and let pork marinate for up to 48 hours before using. Remove tenderloin from marinade, then rub with olive oil and a generous amount of Zesty Pelican Original Blend seasoning. Let sit for 15 minutes. For chimichurri sauce, mix all ingredients together and let sit for up to 30 minutes. Preheat grill to medium heat. Place tenderloin on grill and cook 8 to 10 minutes per side or until a thermometer inserted into the thickest part of the tenderloin reads 145°F. Pork may also be seared and finished in the oven if grilling is not an option. Once tenderloin reaches desired temperature remove from grill and let rest for ten minutes before slicing. Finish by drizzling chimichurri sauce over sliced tenderloin and enjoy!
*Cover and refrigerate leftover chimichurri sauce (can be used for a few days after preparing).
1 pound hamburger
Zesty Pelican Original Blend seasoning
1/4 cup Worcestershire sauce
1/4 cup minced onion
4 brioche buns
4 slices sharp cheddar cheese
lettuce, tomato, onion to garnish
1 cup mayo
1/4 cup stone ground mustard
1 tbsp hot sauce
1 tsp lime juice
1 tsp Zesty Pelican Original Blend seasoning
Mix hamburger, Worcestershire sauce, and minced onion together, then form into (4) 1/4 pound patties. Once formed, season generously on both sides with Zesty Pelican Original Blend seasoning. Set burger patties aside. In a separate bowl, combine all ingredients for Zesty Sauce and mix well until all parts are fully incorporated. Cover and refrigerate for at least 15 minutes. Preheat grill on medium high heat (450°F) and evenly place burger patties on grill. Cook for 3 minutes on each side for medium doneness. During last 30 seconds of cooking, place cheese slices on burger patties to melt. Once burger patties are done, construct Zesty Burgers with lettuce, tomato, and onion between brioche buns. Spread Zesty Sauce onto top bun and enjoy!
3-4 boneless, skinless chicken breasts (cut into 1/2 to 1 inch cubes)
Zesty Pelican Original Blend seasoning
1 cup sliced green pepper
1 cup sliced red pepper
1 cup sliced yellow pepper
1 cup red onion
1/4 cup lime juice
1/2 cup extra virgin olive oil
10 corn tortillas
salsa verde
sour cream
chopped tomatoes
chopped cilantro
queso fresco cheese
Mix chicken with olive oil and sprinkle generously with Zesty Pelican Original Blend seasoning. Place chicken in skillet and sauté over medium high heat for approximately 3 minutes. Add vegetables and continue to sauté until chicken is cooked thoroughly and vegetables are tender. Add lime juice and sprinkle additional Zesty Pelican Original Blend seasoning to finish. Once done, either warm or grill tortillas to make pliable, fill with sautéed filling, top with any add-ons and enjoy!
